How this works (the honest bit). About four eating occasions a day, roughly fifteen minutes each - so at any moment a little over four per cent of the world has a fork in hand. Calories assume a 2,000 kcal daily average and 2 kg of food per person per day, which is a blunt global average rather than a good one. Every figure on this page is a model built from population data, each country's local clock and the assumptions above. It is an estimate, it moves every second, and at least one of them is certainly true.

Why do we get hungry?

Hunger is not a fuel gauge. It is a set of separate signals - some about the stomach, some about reserves, and some about the clock.

  1. The stomach measures volume, not calories. Stretch receptors in the stomach wall report how full it is, not how much energy arrived with the food. That is why a large low-calorie meal satisfies more than a small dense one - and why soup is filling out of all proportion to its energy.
  2. Ghrelin rises before you eat. Ghrelin is released mainly by the stomach and peaks just before your usual mealtimes. It is anticipatory: hunger arrives on schedule, cued by habit and by the clock. That is why it can be trained, and why it tends to fade if you skip the meal entirely.
  3. Leptin reports your reserves. Fat tissue releases leptin in proportion to how much of it there is, and the brain reads that as long-term energy status. It suppresses appetite - but the system desensitises over time, which is one reason lost weight tends to come back.
  4. The signal is not the need. None of these signals measures what you actually require right now. Appetite and requirement are related but separable, which is why an environment engineered for palatability - cheap, varied and always available - is such an effective opponent.

Hunger and satiety are governed by several overlapping systems, and no single hormone explains eating behaviour. The most robust practical finding is that protein and fibre deliver the longest-lasting satiety per calorie.
